Tasting Notes: Continuing the "try something new" series, this fine VS calvados by Pere Magloire is an interesting addition to your bar! Apple brandy made from fermented apple cider (sometimes with pear juice as well), aged in French oak barrels for two years. Single, continuous distillation in copper stills to give it its golden yellow color. Fresh apple and pear on the nose that develops into green apple pie, vanilla, and honey favors. Younger calvadoses (like this one) are typically better for cocktails but I still found it smooth over ice. If you are an apple lover, I recommend giving this a try next time you are on the lookout for something new!

Tasting Notes: This is my all time favourite Rose! As Spring begins to bloom, I find we spend more and more time around the yard, in the garden and on the deck. A nicely chilled bottle of Domaine Houchart Rosé can be the perfect end to a day of gardening or, the beginning of a bbq and deck time. Back Story: This domaine was bought in 1890 by Aurélien Houchart, and the family estate has been farmed since Roman times. Aurélien Houchart created one of the largest estates in Provence. The Domaine was later divided amongst his five children and Geneviève Quiot inherited 50 hectares of vines from her grandfather. She runs the Domaine today. Located about 25km east of Aix-En-Provence, the vines are old, between 30 and 50 years, and the grape varieties grown are typical to Provence; With 50 hectares under vine, there is a variety of soil types; sandy, chalky, clay and silt which ensures that the vines have proper drainage and produce and grapes that can develop a variety of interesting characteristics. Tasting notes: Houchart Rosé has strawberry and citrus aromas that carry onto the palate and develop into strong, yet delicate flavours of summer berry and orchard fruits. This vegan friendly wine of Provence, France is a blend of Cabernet Sauvignon, Cinsault, Grenache, Syrah, and is salmon pink in colour. A wine truly to be enjoyed all year long! And, this Rosé pairs amazingly with seafood, chicken dishes, zesty salads, or as an aperitif.

Tasting Notes: 2BAR Spirits Straight Bourbon Whiskey is a 100-proof bourbon, aged a minimum of 4+ years in new charred oak barrels, known for its notes of butterscotch, vanilla, and a long chocolate, oaked finish. 2 Bar Spirits is a distillery located in Seattle, Washington. The grains used at the distillery are all sourced from the Pacific Northwest. In the case of their bourbon, they use 95% Washington grain and 5% Oregon grain but do not disclose their mash-bill. The whiskey is aged in 15-gallon barrels with a #3 Char level. Tasting Notes: In honor of April bringing in a fresh spring feel, my pick of the month is one of the most unique liqueurs I think everyone should experience at least once. Fernet-Branca is an amaro from Milan, Italy composed of twenty-seven different herbs and spices such as cinnamon, saffron, and chamomile to offer a lovely complex flavor profile. It is herbal, spicey, and a bit minty. It's a hard one to describe but one worth trying. Coined as the "bartender's handshake", Fernet-Branca is an overlooked spirit by most but well loved by those in the industry for its complexity and uniqueness it brings to cocktails or simply on its own. Upon researching, I've seen it be mixed with tonic water, used in moijtos, and more, but it's most popular ice-cold and neat as an aperitif after dinner. I invite you to give it a try next time you're looking for something new!

Tasting Notes: Trius Red The Icon, a Bordeaux blend-inspired wine produced by Hillebrand Winery, burst onto the wine scene with great international acclaim over 23 years ago. Recipe: Cabernet Sauvignon / Cabernet Franc / Merlot. The wine is very much in the Bordeaux tradition: medium red/garnet, on the nose it shows ripe plums, figs, dates, forest floor, slight toasted oak, a bit of chocolate and coffee. On the medium full palate, we find raspberry reduction, saskatoon compote, chokecherry jam, currants, and a very nice bitter orange backdrop. Tannins medium fine. Pair with roast pork, lamb, hard cheeses. The wine is still quite young and will benefit with some time in the bottle. Tasted twice with confirmed notes. Drink now - 2030.
